Breaded Fried Flounder With Fried Parsley
Ingredients
- 2 firm flounder fillets
- All-purpose flour, for dredging
- 1 egg, beaten with salt and pepper
- Stale breadcrumbs
- Olive oil, for frying
- Fried parsley, for garnish
- Lemon, cut into quarters
Method
- 1 Trim the flounder fillets and lightly dredge each piece in flour, shaking off excess.
- 2 Dip the floured fillets into the beaten egg seasoned with salt and pepper, ensuring full coverage.
- 3 Coat both sides of the fillets thoroughly with stale breadcrumbs.
- 4 Fry the fillets in hot olive oil until golden brown on both sides.
- 5 Place fillets on a sieve lined with paper to drain excess oil.
- 6 Serve immediately garnished with fried parsley and lemon quarters.
