Breaded Fried Flounder Rolls

Ingredients

  • flounder fillets
  • salt and pepper
  • butter
  • egg
  • bread crumbs
  • hot fat for frying
  • remoulade, Tartare, or tomato sauce for serving

Method

  1. 1 Marinate flounder fillets or dredge with salt and pepper, then dip into butter.
  2. 2 Roll fillets from the broad end and fasten with a wooden toothpick.
  3. 3 Coat fillets in egg and bread crumbs.
  4. 4 Fry in hot fat for seven minutes, cooking only four at a time to maintain oil temperature.
  5. 5 Remove toothpicks and serve with remoulade, Tartare, or tomato sauce.
