Breaded Fried Eggplant Slices
Ingredients
- young, fresh eggplants
- egg yolk
- grated bread
- salt
- pepper
Method
- 1 Pull out the stem and parboil the eggplants to remove bitterness. Do not peel.
- 2 Cut the eggplants into 1-inch thick slices.
- 3 Dip slices in egg yolk, then coat with a mixture of grated bread, salt, and pepper.
- 4 Allow the coating to dry slightly, then coat the other side the same way.
- 5 Fry in oil until nicely browned on both sides. Serve hot.
