Breaded Fried Eggplant Slices

Ingredients

  • young, fresh eggplants
  • egg yolk
  • grated bread
  • salt
  • pepper

Method

  1. 1 Pull out the stem and parboil the eggplants to remove bitterness. Do not peel.
  2. 2 Cut the eggplants into 1-inch thick slices.
  3. 3 Dip slices in egg yolk, then coat with a mixture of grated bread, salt, and pepper.
  4. 4 Allow the coating to dry slightly, then coat the other side the same way.
  5. 5 Fry in oil until nicely browned on both sides. Serve hot.
