Breaded Fried Eggplant Rounds

Ingredients

  • 1 eggplant
  • salt water (for soaking)
  • 1 egg, beaten
  • fine bread crumbs or cracker crumbs
  • hot fat or deep fat (for frying)
  • catsup or tomato sauce (for serving)

Method

  1. 1 Peel the eggplant and slice it into ½-inch thick rounds.
  2. 2 Soak the slices in salt water for about an hour, then drain and wipe them dry.
  3. 3 Dip each slice in beaten egg, then roll in fine bread or cracker crumbs to coat.
  4. 4 Fry in hot fat until well browned on both sides.
  5. 5 Serve immediately with catsup or tomato sauce.
