Breaded Fried Eggplant Rounds
Ingredients
- 1 eggplant
- salt water (for soaking)
- 1 egg, beaten
- fine bread crumbs or cracker crumbs
- hot fat or deep fat (for frying)
- catsup or tomato sauce (for serving)
Method
- 1 Peel the eggplant and slice it into ½-inch thick rounds.
- 2 Soak the slices in salt water for about an hour, then drain and wipe them dry.
- 3 Dip each slice in beaten egg, then roll in fine bread or cracker crumbs to coat.
- 4 Fry in hot fat until well browned on both sides.
- 5 Serve immediately with catsup or tomato sauce.
