Breaded Baked Sole With Mushrooms

Ingredients

  • 1 whole sole
  • 2 tsp chopped parsley
  • 1 chopped shallot
  • 6 chopped button mushrooms
  • Lemon juice
  • Salt and pepper
  • ½ oz butter
  • Brown bread crumbs

Method

  1. 1 Grease a heatproof dish. Sprinkle half the parsley, shallot, mushrooms, lemon juice, salt, and pepper into the dish.
  2. 2 Place the sole on top of the vegetable mixture. Sprinkle the remaining parsley, shallot, and mushrooms over the fish.
  3. 3 Cover with brown bread crumbs and dot with small pieces of butter.
  4. 4 Bake for 10-15 minutes depending on the size of the fish. Serve with glaze poured around it.
