Bread Pudding With Vanilla Sauce

Ingredients

  • 1 tablespoon margarine
  • 5 slices whole wheat bread, torn into pieces
  • 1 egg
  • 1/3 cup sugar
  • 1 dash salt
  • 2 cups non-fat milk
  • 1 1/2 teaspoons vanilla extract
  • 1/4 cup raisins
  • 1 teaspoon cinnamon or nutmeg
  • 1 tablespoon cornstarch
  • 1/3 cup sugar
  • 1 cup water
  • 1 tablespoon margarine or butter
  • 1 1/2 teaspoons vanilla extract

Method

  1. 1 Melt 1 tablespoon margarine in a medium skillet. Tear bread into pieces and spread on the bottom.
  2. 2 Beat egg, 1/3 cup sugar, salt, 2 cups milk, and 1 1/2 teaspoons vanilla. Sprinkle raisins and spices over bread, then pour egg mixture over all.
  3. 3 Cover and cook over very low heat for 20 minutes until custard is set in the middle. Allow to cool in the skillet.
  4. 4 Combine 1 tablespoon cornstarch and 1/3 cup sugar in a saucepan. Gradually whisk in 1 cup water.
  5. 5 Cook sauce over medium heat, stirring constantly, until thick and clear. Remove from heat and stir in 1 tablespoon margarine and 1 1/2 teaspoons vanilla.
  6. 6 Spoon warm vanilla sauce over individual servings of bread pudding. Refrigerate leftovers within two hours.
