Bread Flour Puff Pastry
Ingredients
- 1 ½ cups bread flour
- 1 cup butter, divided
- 5/8 cup ice water
Method
- 1 Reserve 1 tablespoon of butter. Wrap the remaining butter in plastic and chill between two ice-filled pans until very cold.
- 2 Work the reserved 1 tablespoon of butter into the flour. Mix in ice water to form a dough. Knead for 5 minutes, cover, and let rest for 5 minutes.
- 3 Roll dough into a square ¼ inch thick. Place the cold butter block in the center. Fold the dough over the butter like an envelope, sealing edges.
- 4 Roll the packet into a rectangle ¼ inch thick. Fold into thirds (letter fold). Rotate 90 degrees. Repeat rolling and folding 4 times total, chilling between turns if needed.
- 5 Chill the final dough, roll out, and shape as desired. Bake in a hot oven (425°F), reducing heat after the pastry rises to finish cooking through.
