Bread Crusted Poached Eggs On Toast
Ingredients
- 4 tablespoons butter
- 2 tablespoons chopped parsley
- Salt and pepper to taste
- 4 large eggs
- Breadcrumbs
- Buttered toast for serving
Method
- 1 Butter four teacups (approx. 3/4 cup each) and sprinkle with chopped parsley, salt, and pepper.
- 2 Break one egg into each prepared cup.
- 3 Cover the eggs with breadcrumbs.
- 4 Place cups in a saucepan of boiling water and cook for 5 minutes.
- 5 Carefully turn out the eggs onto buttered toast and serve immediately.
