  • 4 tablespoons butter
  • 2 tablespoons chopped parsley
  • Salt and pepper to taste
  • 4 large eggs
  • Breadcrumbs
  • Buttered toast for serving

Method

  1. 1 Butter four teacups (approx. 3/4 cup each) and sprinkle with chopped parsley, salt, and pepper.
  2. 2 Break one egg into each prepared cup.
  3. 3 Cover the eggs with breadcrumbs.
  4. 4 Place cups in a saucepan of boiling water and cook for 5 minutes.
  5. 5 Carefully turn out the eggs onto buttered toast and serve immediately.
