Bread Crumb Stuffed Tomatoes
Ingredients
- 4 large tomatoes
- 1 onion, grated
- 2 tablespoons finely chopped parsley
- 1 well-beaten egg
- 1 teaspoon salt
- 1 teaspoon paprika
- 3/4 cup fine bread crumbs
- 3 tablespoons melted shortening
- 1/2 cup hot water
Method
- 1 Cut a slice from the top of each tomato and scoop out the centers with a spoon. Finely chop the removed centers.
- 2 In a bowl, combine the chopped tomato centers, grated onion, parsley, egg, salt, paprika, bread crumbs, and melted shortening. Mix well.
- 3 Grease the hollowed tomatoes to prevent bursting. Fill them with the mixture, forming a point at the top.
- 4 Place the stuffed tomatoes in a greased baking pan. Pour one-half cup of hot water into the bottom of the pan.
- 5 Bake for 40 minutes until the tomatoes are tender and the filling is set.
