Bread Crumb Stuffed Tomatoes

Ingredients

  • 4 large tomatoes
  • 1 onion, grated
  • 2 tablespoons finely chopped parsley
  • 1 well-beaten egg
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 3/4 cup fine bread crumbs
  • 3 tablespoons melted shortening
  • 1/2 cup hot water

Method

  1. 1 Cut a slice from the top of each tomato and scoop out the centers with a spoon. Finely chop the removed centers.
  2. 2 In a bowl, combine the chopped tomato centers, grated onion, parsley, egg, salt, paprika, bread crumbs, and melted shortening. Mix well.
  3. 3 Grease the hollowed tomatoes to prevent bursting. Fill them with the mixture, forming a point at the top.
  4. 4 Place the stuffed tomatoes in a greased baking pan. Pour one-half cup of hot water into the bottom of the pan.
  5. 5 Bake for 40 minutes until the tomatoes are tender and the filling is set.
