Ingredients

  • bread scraps or stale bread
  • 1 whole egg
  • 1 tablespoon water
  • salt and pepper (for meats)
  • sugar (for sweet articles)
  • cracker crumbs (optional, for oysters)

Method

  1. 1 Prepare crumbs by drying, rolling, and sifting bread scraps or stale bread.
  2. 2 Beat one egg with one tablespoon of water until thin but not foamy.
  3. 3 Roll the food item in crumbs to dry the surface, then dip in the egg mixture.
  4. 4 Pour egg over the item to moisten thoroughly, then cover completely with fresh crumbs.
  5. 5 For soft mixtures like croquettes, mold into shape during the second crumbing and rest for one hour before frying.
