Bread And Butter Pudding With Puff Pastry Rim
Ingredients
- 1 penny loaf or French roll, sliced thin
- Butter, for slicing and dish
- Currants, washed and picked
- 3 eggs
- 1 pint milk
- Salt, to taste
- Grated nutmeg or ginger
- A few bitter almonds
- Puff pastry, for rim
Method
- 1 Slice the loaf thinly with butter. Butter the bottom of a baking dish.
- 2 Layer the bread and butter in the dish, sprinkling currants between layers until all bread is used.
- 3 Beat eggs with milk, salt, nutmeg (or ginger), and sliced bitter almonds. Pour over the bread.
- 4 Place a rim of puff pastry around the dish edge. Bake at 350°F for 30 minutes.
