Bread And Butter Pudding With Puff Pastry Rim

Ingredients

  • 1 penny loaf or French roll, sliced thin
  • Butter, for slicing and dish
  • Currants, washed and picked
  • 3 eggs
  • 1 pint milk
  • Salt, to taste
  • Grated nutmeg or ginger
  • A few bitter almonds
  • Puff pastry, for rim

Method

  1. 1 Slice the loaf thinly with butter. Butter the bottom of a baking dish.
  2. 2 Layer the bread and butter in the dish, sprinkling currants between layers until all bread is used.
  3. 3 Beat eggs with milk, salt, nutmeg (or ginger), and sliced bitter almonds. Pour over the bread.
  4. 4 Place a rim of puff pastry around the dish edge. Bake at 350°F for 30 minutes.
