Bread And Butter Pickles

Ingredients

  • 1 gallon cucumbers, sliced
  • 8 onions, sliced
  • ½ cup salt
  • 2 green peppers, sliced
  • 2 red peppers, sliced
  • 5 cups sugar
  • 2 tablespoons mustard seed
  • 2 tablespoons celery seed
  • 1½ teaspoons turmeric
  • ½ teaspoon ground cloves
  • 5 cups vinegar

Method

  1. 1 Slice cucumbers, onions, and peppers. Pack in ice, place a heavy weight on top, and let stand for 3 hours.
  2. 2 Drain the vegetables well to remove excess liquid.
  3. 3 Combine sugar, mustard seed, celery seed, turmeric, cloves, and vinegar in a pot. Mix well and bring to a simmer.
  4. 4 Pour the hot syrup over the drained pickles and simmer for 30 minutes.
  5. 5 Seal the pickles in hot jars.
