Brandy Soaked Morello Cherries
Ingredients
- 1 bottle brandy
- ½ lb white sugar candy
- Large ripe Morello cherries
- Blanched apricot kernels (optional)
Method
- 1 Dissolve the sugar candy in the brandy.
- 2 Cut the stalks of the cherries, leaving about half the original length.
- 3 Pack the cherries tightly into a glass or earthen jar.
- 4 Pour the brandy mixture over the cherries, ensuring they are completely covered.
- 5 Top up with more brandy as the liquor settles.
- 6 Cork the jar tightly and tie a leather cover over the top.
- 7 Add blanched apricot kernels if desired.
