Brandy Soaked Morello Cherries

Ingredients

  • 1 bottle brandy
  • ½ lb white sugar candy
  • Large ripe Morello cherries
  • Blanched apricot kernels (optional)

Method

  1. 1 Dissolve the sugar candy in the brandy.
  2. 2 Cut the stalks of the cherries, leaving about half the original length.
  3. 3 Pack the cherries tightly into a glass or earthen jar.
  4. 4 Pour the brandy mixture over the cherries, ensuring they are completely covered.
  5. 5 Top up with more brandy as the liquor settles.
  6. 6 Cork the jar tightly and tie a leather cover over the top.
  7. 7 Add blanched apricot kernels if desired.
