Brandy Sabayon With Whipped Cream

Ingredients

  • 2 egg yolks
  • 2 tablespoons powdered sugar
  • 1 tablespoon brandy, kirsch, rum, or maraschino
  • 1/2 pint heavy cream, whipped to stiff peaks

Method

  1. 1 Beat egg yolks and powdered sugar together until light and creamy.
  2. 2 Cook the mixture in a double boiler over heat, stirring constantly, until slightly thickened but not hard. Do not boil.
  3. 3 Remove from heat and beat continuously until the mixture is completely cool.
  4. 4 Stir in your choice of liquor (brandy, kirsch, rum, or maraschino).
  5. 5 Gently fold in the whipped heavy cream until fully incorporated.
