Brandy Sabayon With Whipped Cream
Ingredients
- 2 egg yolks
- 2 tablespoons powdered sugar
- 1 tablespoon brandy, kirsch, rum, or maraschino
- 1/2 pint heavy cream, whipped to stiff peaks
Method
- 1 Beat egg yolks and powdered sugar together until light and creamy.
- 2 Cook the mixture in a double boiler over heat, stirring constantly, until slightly thickened but not hard. Do not boil.
- 3 Remove from heat and beat continuously until the mixture is completely cool.
- 4 Stir in your choice of liquor (brandy, kirsch, rum, or maraschino).
- 5 Gently fold in the whipped heavy cream until fully incorporated.
