Brandy Nutmeg Sponge Cake
Ingredients
- 1 lb flour
- ¾ lb fresh butter, beaten to a cream
- ¾ lb lump sugar, finely pounded
- 9 eggs, whites and yolks beaten separately
- Nutmeg to taste
- 1 glass brandy
Method
- 1 Beat the butter to a cream.
- 2 Add the finely pounded sugar and mix well.
- 3 Incorporate the egg yolks into the butter mixture.
- 4 Fold in the flour and nutmeg.
- 5 Gently fold in the beaten egg whites.
- 6 Stir in the brandy and bake in a moderate oven.
