Brandy Nutmeg Sponge Cake

Ingredients

  • 1 lb flour
  • ¾ lb fresh butter, beaten to a cream
  • ¾ lb lump sugar, finely pounded
  • 9 eggs, whites and yolks beaten separately
  • Nutmeg to taste
  • 1 glass brandy

Method

  1. 1 Beat the butter to a cream.
  2. 2 Add the finely pounded sugar and mix well.
  3. 3 Incorporate the egg yolks into the butter mixture.
  4. 4 Fold in the flour and nutmeg.
  5. 5 Gently fold in the beaten egg whites.
  6. 6 Stir in the brandy and bake in a moderate oven.
