Brandy Glazed Apple Fritters
Ingredients
- Apples, pared and sliced thin
- 1 glass brandy
- White wine
- ¼ lb pounded sugar
- Cinnamon, finely powdered
- Rind of 1 lemon, grated
- 2 eggs, beaten light
- ¼ lb flour
- 1 tbsp melted butter
- Cold water
- Sugar, for sprinkling
Method
- 1 Combine apple slices, brandy, white wine, sugar, cinnamon, and lemon rind in a bowl. Let stand, turning frequently.
- 2 Beat eggs, then mix in flour, melted butter, and enough cold water to form a thin batter.
- 3 Drip apples on a sieve to drain, then mix with the batter.
- 4 Fry spoonfuls of batter and apple in hot oil until light brown. Drain well.
- 5 Place in a dish, sprinkle with sugar, and glaze if desired.
