Brandy Glazed Apple Fritters

Ingredients

  • Apples, pared and sliced thin
  • 1 glass brandy
  • White wine
  • ¼ lb pounded sugar
  • Cinnamon, finely powdered
  • Rind of 1 lemon, grated
  • 2 eggs, beaten light
  • ¼ lb flour
  • 1 tbsp melted butter
  • Cold water
  • Sugar, for sprinkling

Method

  1. 1 Combine apple slices, brandy, white wine, sugar, cinnamon, and lemon rind in a bowl. Let stand, turning frequently.
  2. 2 Beat eggs, then mix in flour, melted butter, and enough cold water to form a thin batter.
  3. 3 Drip apples on a sieve to drain, then mix with the batter.
  4. 4 Fry spoonfuls of batter and apple in hot oil until light brown. Drain well.
  5. 5 Place in a dish, sprinkle with sugar, and glaze if desired.
