Brandy Fruit Cake With Mixed Nuts

Ingredients

  • 1 cup brandy
  • 1 cup flour
  • 1 cup butter
  • 6 eggs
  • 1 cup sugar
  • 1 cup raisins
  • 1 cup currants
  • 1 cup prunes
  • 1 cup figs, chopped
  • ½ cup candied mixed peel
  • ½ cup almonds
  • ½ tsp mixed spice or nutmeg

Method

  1. 1 Beat the butter to a cream.
  2. 2 Add the sugar and beat until light and fluffy.
  3. 3 Beat the eggs separately and add them to the butter mixture.
  4. 4 Stir in the brandy, flour, spices, and all the chopped fruits and nuts.
  5. 5 Pour into a greased pan and bake in a moderate oven (350°F) until done.
