Brandy Fruit Cake With Mixed Nuts
Ingredients
- 1 cup brandy
- 1 cup flour
- 1 cup butter
- 6 eggs
- 1 cup sugar
- 1 cup raisins
- 1 cup currants
- 1 cup prunes
- 1 cup figs, chopped
- ½ cup candied mixed peel
- ½ cup almonds
- ½ tsp mixed spice or nutmeg
Method
- 1 Beat the butter to a cream.
- 2 Add the sugar and beat until light and fluffy.
- 3 Beat the eggs separately and add them to the butter mixture.
- 4 Stir in the brandy, flour, spices, and all the chopped fruits and nuts.
- 5 Pour into a greased pan and bake in a moderate oven (350°F) until done.
