Brandy Custard Pie With Puff Pastry

Ingredients

  • 1 pint milk
  • ¼ pint heavy cream
  • 2 tablespoons flour
  • 2 tablespoons water
  • 5 egg yolks
  • powdered sugar to taste
  • freshly grated nutmeg
  • lemon peel
  • ¼ cup brandy
  • 5 egg whites
  • puff pastry for pie dish

Method

  1. 1 Boil milk and cream in a saucepan.
  2. 2 Mix flour and water until smooth, then stir into the hot milk mixture. Cook until thick enough to support an egg.
  3. 3 Remove from heat. Stir in egg yolks, sugar, nutmeg, lemon peel, and brandy.
  4. 4 Whip egg whites until stiff peaks form. Gently fold into the custard mixture.
  5. 5 Pour into a pie dish lined with puff pastry. Bake at 350°F for 30 minutes.
