Brandy Custard Pie With Puff Pastry
Ingredients
- 1 pint milk
- ¼ pint heavy cream
- 2 tablespoons flour
- 2 tablespoons water
- 5 egg yolks
- powdered sugar to taste
- freshly grated nutmeg
- lemon peel
- ¼ cup brandy
- 5 egg whites
- puff pastry for pie dish
Method
- 1 Boil milk and cream in a saucepan.
- 2 Mix flour and water until smooth, then stir into the hot milk mixture. Cook until thick enough to support an egg.
- 3 Remove from heat. Stir in egg yolks, sugar, nutmeg, lemon peel, and brandy.
- 4 Whip egg whites until stiff peaks form. Gently fold into the custard mixture.
- 5 Pour into a pie dish lined with puff pastry. Bake at 350°F for 30 minutes.
