Brandy Apricot Fritters

Ingredients

  • 12 apricots preserved in brandy
  • 1 ½ cups water
  • 1/8 tsp salt
  • 2 oz unsalted butter
  • Flour (approx. 1 cup, for firm batter)
  • Round wafers
  • Sugar for sprinkling

Method

  1. 1 Drain the preserved apricots halfway. Wrap each apricot in a wafer previously moistened.
  2. 2 In a saucepan, combine water, salt, and butter. Bring to a boil.
  3. 3 Stir in flour until a firm batter forms. Stir constantly for 3 minutes, then remove from heat.
  4. 4 Dip the wrapped apricots into the batter and fry until golden.
  5. 5 Sprinkle with sugar and serve immediately.
