Brandy Apricot Fritters
Ingredients
- 12 apricots preserved in brandy
- 1 ½ cups water
- 1/8 tsp salt
- 2 oz unsalted butter
- Flour (approx. 1 cup, for firm batter)
- Round wafers
- Sugar for sprinkling
Method
- 1 Drain the preserved apricots halfway. Wrap each apricot in a wafer previously moistened.
- 2 In a saucepan, combine water, salt, and butter. Bring to a boil.
- 3 Stir in flour until a firm batter forms. Stir constantly for 3 minutes, then remove from heat.
- 4 Dip the wrapped apricots into the batter and fry until golden.
- 5 Sprinkle with sugar and serve immediately.
