Bran Flake Raisin Muffins

  • 1/2 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 1/4 teaspoon salt
  • 2 teaspoons baking soda
  • 1/2 cup sugar
  • 1 3/4 cups bran flake cereal with raisins
  • 1 egg
  • 1 cup buttermilk
  • 2 tablespoons vegetable oil

Method

  1. 1 Preheat oven to 425°F. Spray or grease a muffin tin.
  2. 2 In a large bowl, mix all-purpose flour, whole wheat flour, salt, baking soda, and sugar. Stir in the bran flake cereal.
  3. 3 Make a well in the center of the dry ingredients. In a separate bowl, beat the egg, buttermilk, and vegetable oil together.
  4. 4 Pour the wet mixture into the well of the dry ingredients. Stir until just moistened; do not overmix.
  5. 5 Fill muffin tins 2/3 full. Bake for 15-20 minutes or until golden brown.
