Bran Flake Cereal Muffins
Ingredients
- 1/2 cup all-purpose flour
- 3/4 cup whole wheat flour
- 1/4 teaspoon salt
- 2 teaspoons baking soda
- 1/2 cup sugar
- 1 3/4 cups bran flake cereal with raisins
- 1 egg
- 1 cup buttermilk
- 2 tablespoons vegetable oil
Method
- 1 Preheat oven to 425°F. Grease a muffin tin.
- 2 In a large bowl, combine all-purpose flour, whole wheat flour, salt, baking soda, and sugar. Mix well.
- 3 Stir in the bran flake cereal with raisins. Mix well.
- 4 Make a well in the center of the dry mixture.
- 5 In another bowl, beat the egg, buttermilk, and vegetable oil together.
- 6 Pour wet ingredients into the well. Stir until moistened; do not overmix.
- 7 Fill muffin tins 2/3 full. Bake for 15-20 minutes or until golden brown.
