Braised Veal With Potatoes
Ingredients
- 1 saddle of veal
- 2 tablespoons butter, divided
- Salt and pepper to taste
- 2 raw potatoes, cut into sections
- 1 onion, finely minced
- 1 clove garlic, minced
- 1 tablespoon flour
- 2 cups stock
- 1 bouquet of herbs
Method
- 1 Trim the veal saddle and brown it in butter in a saucepan over heat until golden on all sides. Remove to a dish and season with salt and pepper.
- 2 Add more butter to the pan, then add the potato sections. Cover and cook, shaking frequently, until potatoes are golden brown.
- 3 Add the minced onion and garlic; cook until browned. Sprinkle in the flour and cook until the flour is brown.
- 4 Stir in the stock, then return the veal and any accumulated juices to the pan. Add the bouquet of herbs.
- 5 Simmer for at least one hour. Serve the meat surrounded by potatoes, pouring the sauce over everything.
