Braised Veal With Potatoes And Onions
Ingredients
- 1 onion, peeled and sliced
- 3 tablespoons fat from salt pork
- 1.5 pounds lean veal, cut into 1-inch cubes
- 1 cup broth or boiling water
- 1 teaspoon pepper
- 12 small potatoes, peeled and cut into balls
- 12 small onions
- 1 teaspoon salt
- 2 tablespoons flour mixed with cold water
Method
- 1 Slice onion and cook in salt pork fat until brown. Remove onion.
- 2 Brown veal cubes in the pan. Transfer meat to a casserole.
- 3 Add broth, water, and pepper to casserole. Cover and cook in oven.
- 4 Brown potato balls and small onions in remaining fat.
- 5 After meat cooks 1 hour, add salt, potatoes, and onions to casserole.
- 6 Stir in flour paste. Cook covered for 1 more hour. Serve hot.
