Braised Veal With Potatoes And Onions

Ingredients

  • 1 onion, peeled and sliced
  • 3 tablespoons fat from salt pork
  • 1.5 pounds lean veal, cut into 1-inch cubes
  • 1 cup broth or boiling water
  • 1 teaspoon pepper
  • 12 small potatoes, peeled and cut into balls
  • 12 small onions
  • 1 teaspoon salt
  • 2 tablespoons flour mixed with cold water

Method

  1. 1 Slice onion and cook in salt pork fat until brown. Remove onion.
  2. 2 Brown veal cubes in the pan. Transfer meat to a casserole.
  3. 3 Add broth, water, and pepper to casserole. Cover and cook in oven.
  4. 4 Brown potato balls and small onions in remaining fat.
  5. 5 After meat cooks 1 hour, add salt, potatoes, and onions to casserole.
  6. 6 Stir in flour paste. Cook covered for 1 more hour. Serve hot.
