Braised Veal With Mushrooms
Ingredients
- 1 lb veal, bone-in
- 1 tbsp butter or olive oil
- ½ medium onion
- 1 small carrot
- 2 celery stalks, chopped
- Salt and pepper to taste
- 1 pinch flour
- 1 tbsp tomato paste
- Water as needed
- Dried mushrooms, softened and boiled
Method
- 1 Place veal, fat, onion, carrot, and celery in a saucepan. Season with salt and pepper.
- 2 Cook over low heat, turning meat often until browned.
- 3 Add flour and tomato paste. Cook briefly without burning.
- 4 Add water gradually and dried mushrooms. Simmer until meat is tender.
- 5 Serve the stewed veal with vegetables. Reserve sauce for pasta or rice.
