Braised Veal With Mushrooms

Ingredients

  • 1 lb veal, bone-in
  • 1 tbsp butter or olive oil
  • ½ medium onion
  • 1 small carrot
  • 2 celery stalks, chopped
  • Salt and pepper to taste
  • 1 pinch flour
  • 1 tbsp tomato paste
  • Water as needed
  • Dried mushrooms, softened and boiled

Method

  1. 1 Place veal, fat, onion, carrot, and celery in a saucepan. Season with salt and pepper.
  2. 2 Cook over low heat, turning meat often until browned.
  3. 3 Add flour and tomato paste. Cook briefly without burning.
  4. 4 Add water gradually and dried mushrooms. Simmer until meat is tender.
  5. 5 Serve the stewed veal with vegetables. Reserve sauce for pasta or rice.
