Braised Veal Stew With Carrots

Ingredients

  • 1½ lbs veal steak, cut into cubes
  • 2 tbsp shortening (preferably bacon fat)
  • 2 tbsp flour
  • 1 cup tomato juice
  • 2 carrots, diced
  • 1 small onion, chopped fine
  • Salt and pepper
  • Flour for dredging

Method

  1. 1 Dredge the veal cubes in flour and season with salt and pepper.
  2. 2 Melt shortening in a pan and brown the meat. Remove meat from the pan.
  3. 3 Stir in 2 tbsp flour into the pan drippings and blend. Add tomato juice, stirring until thickened.
  4. 4 Return meat to the pan, add carrots and onion. Cover and simmer for 45 minutes.
