Braised Veal Stew With Carrots
Ingredients
- 1½ lbs veal steak, cut into cubes
- 2 tbsp shortening (preferably bacon fat)
- 2 tbsp flour
- 1 cup tomato juice
- 2 carrots, diced
- 1 small onion, chopped fine
- Salt and pepper
- Flour for dredging
Method
- 1 Dredge the veal cubes in flour and season with salt and pepper.
- 2 Melt shortening in a pan and brown the meat. Remove meat from the pan.
- 3 Stir in 2 tbsp flour into the pan drippings and blend. Add tomato juice, stirring until thickened.
- 4 Return meat to the pan, add carrots and onion. Cover and simmer for 45 minutes.
