  • 3 lb knuckle of veal
  • pork fat
  • salt and pepper
  • stock
  • 1 cup partially cooked lima beans

Method

  1. 1 Lard the veal knuckle and brown it in pork fat, seasoning with salt and pepper.
  2. 2 Add stock to moisten and stir in the partially cooked lima beans.
  3. 3 Cook for 45 minutes and serve very hot.
