Braised Veal Knuckle With Lima Beans
Ingredients
- 3 lb knuckle of veal
- pork fat
- salt and pepper
- stock
- 1 cup partially cooked lima beans
Method
- 1 Lard the veal knuckle and brown it in pork fat, seasoning with salt and pepper.
- 2 Add stock to moisten and stir in the partially cooked lima beans.
- 3 Cook for 45 minutes and serve very hot.
