Braised Veal Breast With Celery
Ingredients
- 1 piece veal breast with bones
- 1 clove garlic, minced
- 1 tbsp parsley, chopped
- 1 stalk celery, chopped
- 1 carrot, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tbsp all-purpose flour
- 2 tbsp tomato sauce or paste diluted in water
- 1 cup broth or water
- 1 tbsp butter
- 2 stalks celery, cut into large pieces, parboiled and browned in butter
Method
- 1 Break a piece of veal breast, leaving all bones. Prepare a hash with garlic, parsley, celery, and carrot.
- 2 Add oil, pepper, and salt to the hash, then place in a pot with the meat. Turn often until it begins to brown.
- 3 Sprinkle a pinch of flour and a little tomato sauce or diluted paste over the meat. Cover the saucepan.
- 4 Complete cooking with broth or water. Finally, add a piece of butter and pre-cooked, browned celery pieces.
