Braised Veal Breast With Celery

Ingredients

  • 1 piece veal breast with bones
  • 1 clove garlic, minced
  • 1 tbsp parsley, chopped
  • 1 stalk celery, chopped
  • 1 carrot, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tbsp all-purpose flour
  • 2 tbsp tomato sauce or paste diluted in water
  • 1 cup broth or water
  • 1 tbsp butter
  • 2 stalks celery, cut into large pieces, parboiled and browned in butter

Method

  1. 1 Break a piece of veal breast, leaving all bones. Prepare a hash with garlic, parsley, celery, and carrot.
  2. 2 Add oil, pepper, and salt to the hash, then place in a pot with the meat. Turn often until it begins to brown.
  3. 3 Sprinkle a pinch of flour and a little tomato sauce or diluted paste over the meat. Cover the saucepan.
  4. 4 Complete cooking with broth or water. Finally, add a piece of butter and pre-cooked, browned celery pieces.
