Braised Squab With Sage, Ham, And Toast
Ingredients
- squabs
- whole sage leaves
- small slices of ham (lean and fat)
- salt
- pepper
- olive oil
- butter
- good broth
- 1 lemon
- toasted bread (squares or diamonds)
Method
- 1 Garnish squabs with sage leaves and place in a saucepan over a bed of sliced ham. Season with salt, pepper, and olive oil.
- 2 Cook over heat until browned, then add a piece of butter.
- 3 Pour in broth and complete cooking. Squeeze lemon over the squabs before removing from heat.
- 4 Serve garnished with squares or diamonds of toasted bread.
