Braised Rump Steak With Burgundy And Bacon
Ingredients
- 1 piece rump steak
- bacon, fat
- salt
- pepper
- pinch of cinnamon
- 3 cloves
- 1 ounce butter
- 1 onion, chopped
- lean ham, bits
- beef stock, sufficient to cover
- 1 glass Burgundy wine
Method
- 1 Beat the rump steak to tenderize and lard it well.
- 2 Cut bacon into bits, dust with salt, pepper, and a pinch of cinnamon, then place on the steak. Stick three cloves into the meat.
- 3 Place steak in a stewpan with chopped beef fat, butter, chopped onion, and bits of lean ham.
- 4 Add enough stock to cover the steak and a glass of Burgundy. Stew gently until cooked.
