Braised Red Cabbage With Bacon Fat

Ingredients

  • 1 head red cabbage, chopped
  • 4 tablespoons bacon fat
  • 3 onions, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 tablespoon vinegar

Method

  1. 1 Chop the red cabbage, place in a saucepan, and cover with boiling water. Cook for five minutes, then drain in a colander and rinse with cold water. Let drain well.
  2. 2 Heat bacon fat in a frying pan over a slow fire. Add the minced onions and prepared cabbage. Cover closely and simmer for twenty minutes, turning frequently.
  3. 3 Just before serving, season with salt, white pepper, and vinegar. Toss to combine and serve immediately.
