Braised Red Cabbage With Bacon Fat
Ingredients
- 1 head red cabbage, chopped
- 4 tablespoons bacon fat
- 3 onions, minced
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 1 tablespoon vinegar
Method
- 1 Chop the red cabbage, place in a saucepan, and cover with boiling water. Cook for five minutes, then drain in a colander and rinse with cold water. Let drain well.
- 2 Heat bacon fat in a frying pan over a slow fire. Add the minced onions and prepared cabbage. Cover closely and simmer for twenty minutes, turning frequently.
- 3 Just before serving, season with salt, white pepper, and vinegar. Toss to combine and serve immediately.
