Braised Raisin And Citron Coffee Cake
Ingredients
- 2 cups milk, scalded and cooled
- 1 cake compressed yeast
- 1 pinch salt
- 1 cup sifted flour (for sponge)
- 1/2 cup melted butter
- 1 cup cleaned and seeded raisins
- 1/4 cup finely shredded citron
- 1 cup sugar
- 3 eggs, well beaten
- Enough sifted flour to make a stiff dough
- Butter for baking sheet
- Sugar and milk for glaze OR butter, sugar, and spice for topping
Method
- 1 Make a sponge by mixing scalded/cooled milk, dissolved yeast, salt, and 1 cup flour. Let rise 2 hours in a warm place.
- 2 Add melted butter, raisins, citron, sugar, and beaten eggs to the sponge. Add enough flour to make a stiff dough.
- 3 Knead thoroughly. Roll into a long strip, cut into three lengthwise strips, braid, and twist into a ring.
- 4 Place on a buttered baking sheet. Let rise until very light, then bake for 30 minutes.
- 5 Glaze with sugar and milk, or rub with butter and sprinkle with sugar and spice while warm.
