Braised Rabbit With Wine And Mushrooms
Ingredients
- 1 rabbit, cut into pieces
- flour for dredging
- butter
- 1 glass Chablis wine
- chopped parsley
- ½ onion
- 3 mushrooms
- salt
- 1 cup good stock
Method
- 1 Cut up the rabbit and wipe the pieces clean. Dredge them in flour.
- 2 Fry the rabbit pieces in butter until browned on all sides.
- 3 Pour in the Chablis, then add parsley, half an onion, mushrooms, salt, and stock.
- 4 Cover and simmer on moderate heat for 45 minutes, adding stock if too dry.
