Braised Rabbit With Shallots And Gravy

Ingredients

  • 1 rabbit, cut into pieces
  • butter for frying
  • 6 shallots, finely minced
  • salt and pepper to taste
  • 3 bay leaves
  • 2 cloves
  • 2 white peppercorns
  • 1 pint gravy (or 1 pint Bovril and water)
  • vinegar to taste
  • 1 tbsp flour mixed with cold water (if needed)

Method

  1. 1 Brown rabbit pieces in butter in a deep frying pan, ensuring they are well-browned but not burnt.
  2. 2 Remove rabbit. In the same pan, cook minced shallots until browned.
  3. 3 Return rabbit to pan. Season with salt, pepper, bay leaves, cloves, and white peppercorns.
  4. 4 Add gravy (or Bovril and water). Bring to a boil, then simmer gently for 45 minutes.
  5. 5 Add vinegar to taste. If sauce is thin, thicken with a flour and cold water slurry.
