Braised Rabbit With Shallots And Gravy
Ingredients
- 1 rabbit, cut into pieces
- butter for frying
- 6 shallots, finely minced
- salt and pepper to taste
- 3 bay leaves
- 2 cloves
- 2 white peppercorns
- 1 pint gravy (or 1 pint Bovril and water)
- vinegar to taste
- 1 tbsp flour mixed with cold water (if needed)
Method
- 1 Brown rabbit pieces in butter in a deep frying pan, ensuring they are well-browned but not burnt.
- 2 Remove rabbit. In the same pan, cook minced shallots until browned.
- 3 Return rabbit to pan. Season with salt, pepper, bay leaves, cloves, and white peppercorns.
- 4 Add gravy (or Bovril and water). Bring to a boil, then simmer gently for 45 minutes.
- 5 Add vinegar to taste. If sauce is thin, thicken with a flour and cold water slurry.
