Braised Rabbit With Onion Gravy

Ingredients

  • 1 rabbit
  • 1 onion stuck with 6 cloves
  • 2 oz butter or dripping
  • 1 oz flour
  • 1/2 pint water or stock
  • Pepper and salt to taste

Method

  1. 1 Cut the rabbit into neat joints and fry them in a stewpan with the butter or dripping until browned.
  2. 2 Remove the rabbit and fry the flour in the pan. Pour in the water or stock, stirring until it boils.
  3. 3 Add the rabbit pieces, onion, pepper, and salt. Simmer gently for about one hour or until tender.
  4. 4 Serve the rabbit on a hot dish and strain the gravy over it.
