Braised Rabbit With Onion Gravy
Ingredients
- 1 rabbit
- 1 onion stuck with 6 cloves
- 2 oz butter or dripping
- 1 oz flour
- 1/2 pint water or stock
- Pepper and salt to taste
Method
- 1 Cut the rabbit into neat joints and fry them in a stewpan with the butter or dripping until browned.
- 2 Remove the rabbit and fry the flour in the pan. Pour in the water or stock, stirring until it boils.
- 3 Add the rabbit pieces, onion, pepper, and salt. Simmer gently for about one hour or until tender.
- 4 Serve the rabbit on a hot dish and strain the gravy over it.
