Braised Pork Roast With Prune Bread Stuffing

Ingredients

  • 1 pork roast
  • sage leaves
  • prunes, soaked
  • 2 cups bread crumbs (one-third corn bread)
  • salt
  • pepper
  • onions, minced

Method

  1. 1 Braise the pork roast. Insert bits of sage into each slit of the meat.
  2. 2 Place the roast in a deep stewpan. Fill corners and crevices with soaked prunes.
  3. 3 Roast in a 350°F oven, basting as usual. Be careful not to break the prunes.
  4. 4 When half done, remove prunes, pit them, and crush them.
  5. 5 Mix crushed prunes with bread crumbs, salt, pepper, and a hint of onions.
  6. 6 Place the mixture in a cheesecloth bag and bake beside the roast for 30 minutes.
  7. 7 Serve the roast sliced with the baked breadcrumb and prune dressing.
