Braised Pork Neck Chops With Gravy

Ingredients

  • 1.5 lbs neck chops, cut into 4 pieces
  • Flour for coating
  • Hot fat for frying
  • 1 cup finely chopped onions
  • 4 tbsp finely chopped parsley
  • 1.5 cups brown gravy

Method

  1. 1 Wipe chops with a damp cloth, roll in flour, and brown quickly in hot fat.
  2. 2 Transfer chops to a casserole dish. Add chopped onions and parsley.
  3. 3 Make gravy by adding 4 tbsp flour to the fat left in the pan. Pour over chops.
  4. 4 Cover tightly and bake in a slow oven (300°F) for 1.5 hours.
