Braised Pork Leg With Sauerkraut
Ingredients
- 1 leg of pork
- 2 quarts sauerkraut
- 1 quart pork cooking liquid
Method
- 1 Boil the leg of pork for 3 to 4 hours until tender.
- 2 Wash the sauerkraut thoroughly and drain.
- 3 Layer half the sauerkraut in the bottom of an iron pot.
- 4 Place the drained pork on top of the sauerkraut.
- 5 Cover with the remaining sauerkraut and add the pork cooking liquid.
- 6 Cover the pot closely and simmer gently for 1 hour.
