Braised Pork Leg With Sauerkraut

Ingredients

  • 1 leg of pork
  • 2 quarts sauerkraut
  • 1 quart pork cooking liquid

Method

  1. 1 Boil the leg of pork for 3 to 4 hours until tender.
  2. 2 Wash the sauerkraut thoroughly and drain.
  3. 3 Layer half the sauerkraut in the bottom of an iron pot.
  4. 4 Place the drained pork on top of the sauerkraut.
  5. 5 Cover with the remaining sauerkraut and add the pork cooking liquid.
  6. 6 Cover the pot closely and simmer gently for 1 hour.
