Braised Mutton With Tomatoes And Bacon
Ingredients
- 1 shoulder or leg of mutton, boned
- Bacon strips, diced, for larding
- Salt and pepper
- 1 large onion, larded with cloves
- 1 tablespoon butter
- 1 cup broth or water
- A small bunch of fresh herbs
- Tomatoes, chopped
Method
- 1 Lard the boned mutton with small pieces of bacon dipped in salt and pepper. Tie the meat tightly.
- 2 Heat butter in a heavy pan. Add the onion larded with cloves and brown the mutton on all sides.
- 3 Remove meat, add broth (or water), herbs, and chopped tomatoes to the pan. Return meat to the pan.
- 4 Cover and simmer on low heat for 3 hours, turning the meat occasionally. Do not overcook.
- 5 Remove meat and onion. Strain the sauce, skim off excess fat, and serve sauce over sliced mutton.
