Braised Mutton With Tomatoes And Bacon

Ingredients

  • 1 shoulder or leg of mutton, boned
  • Bacon strips, diced, for larding
  • Salt and pepper
  • 1 large onion, larded with cloves
  • 1 tablespoon butter
  • 1 cup broth or water
  • A small bunch of fresh herbs
  • Tomatoes, chopped

Method

  1. 1 Lard the boned mutton with small pieces of bacon dipped in salt and pepper. Tie the meat tightly.
  2. 2 Heat butter in a heavy pan. Add the onion larded with cloves and brown the mutton on all sides.
  3. 3 Remove meat, add broth (or water), herbs, and chopped tomatoes to the pan. Return meat to the pan.
  4. 4 Cover and simmer on low heat for 3 hours, turning the meat occasionally. Do not overcook.
  5. 5 Remove meat and onion. Strain the sauce, skim off excess fat, and serve sauce over sliced mutton.
