Braised Larded Veal Cutlets

Ingredients

  • veal cutlets, thick
  • fat bacon, for larding
  • salt
  • pepper
  • butter
  • stock

Method

  1. 1 Cut veal into thick cutlets and lard them with strips of fat bacon.
  2. 2 Place cutlets in a baking dish with butter, salt, and pepper. Braise in a moderate oven (350°F) until cooked through.
  3. 3 Remove meat to a serving dish. Add a little stock to the hot pan and rinse to deglaze.
  4. 4 Pour the pan sauce over the veal and serve immediately.
