Braised Larded Veal Cutlets
Ingredients
- veal cutlets, thick
- fat bacon, for larding
- salt
- pepper
- butter
- stock
Method
- 1 Cut veal into thick cutlets and lard them with strips of fat bacon.
- 2 Place cutlets in a baking dish with butter, salt, and pepper. Braise in a moderate oven (350°F) until cooked through.
- 3 Remove meat to a serving dish. Add a little stock to the hot pan and rinse to deglaze.
- 4 Pour the pan sauce over the veal and serve immediately.
