Braised Larded Beef Roast

Ingredients

  • 1 round of beef
  • fat bacon, cut into strips
  • sweet herbs
  • spice
  • salt
  • pepper
  • flour
  • 1 pint water
  • cooking wine (optional)

Method

  1. 1 Trim the fat from the beef. Roll strips of fat bacon in a mixture of sweet herbs, spice, salt, and pepper.
  2. 2 Lard the meat with the herb-coated bacon strips. Rub the remaining seasoning mixture into the meat.
  3. 3 Dredge the beef in flour and place it in a deep pan. Add 1 pint of water.
  4. 4 Bake in a moderate oven (350°F), basting often, until tender. Strain the gravy.
  5. 5 Add a little cooking wine to the gravy if desired. Serve hot or cold.
