Braised Larded Beef Roast
Ingredients
- 1 round of beef
- fat bacon, cut into strips
- sweet herbs
- spice
- salt
- pepper
- flour
- 1 pint water
- cooking wine (optional)
Method
- 1 Trim the fat from the beef. Roll strips of fat bacon in a mixture of sweet herbs, spice, salt, and pepper.
- 2 Lard the meat with the herb-coated bacon strips. Rub the remaining seasoning mixture into the meat.
- 3 Dredge the beef in flour and place it in a deep pan. Add 1 pint of water.
- 4 Bake in a moderate oven (350°F), basting often, until tender. Strain the gravy.
- 5 Add a little cooking wine to the gravy if desired. Serve hot or cold.
