Braised Lamb With Bacon And Onions
Ingredients
- 1 shoulder of lamb, boned
- small strips of bacon
- butter
- 12 small peeled onions
- 1 tablespoon minced parsley
- stock
- browned flour
Method
- 1 Remove the bone from the lamb shoulder. Lard the meat with small strips of bacon and tie it into a compact shape.
- 2 Brown the lamb in butter in a heavy pot. Add the peeled onions, minced parsley, and enough stock to cover the meat.
- 3 Simmer covered until the onions are tender and the lamb is cooked through. Remove the meat and discard the skin.
- 4 Thicken the cooking liquor with browned flour to make a sauce. Pour the sauce over the meat and serve with the onions as a garnish.
