Braised Lamb Chops With Root Vegetables

Ingredients

  • 1 onion, chopped fine
  • 1 small carrot, chopped fine
  • 1 turnip, chopped fine
  • Butter
  • 6 to 8 lamb chops
  • Stock or water
  • Salt and pepper to taste
  • Browned flour

Method

  1. 1 Chop the onion, carrot, and turnip finely. Fry them in butter until browned, then transfer to a casserole dish.
  2. 2 Place the lamb chops, previously browned in butter, on top of the vegetables in the casserole.
  3. 3 Add a little stock or water, season to taste, and cover the dish tightly.
  4. 4 Cook until the meat is tender. Thicken the gravy with browned flour and serve directly from the casserole.
