Braised Hare With Mushrooms And Tomato
Ingredients
- 1/2 good-sized hare, cut into pieces
- 1 medium onion, chopped fine
- 1 clove garlic, chopped fine
- 1 stalk celery, chopped fine
- Several leaves rosemary, chopped
- Butter, for browning
- 2 tbsp olive oil
- 4-5 strips bacon or salt pork
- Salt and pepper
- Spices
- 1/4 cup white wine
- Fresh or dried mushrooms
- Broth
- Tomato sauce
- Butter, optional
Method
- 1 Chop onion, garlic, celery, and rosemary finely. Heat butter, olive oil, and bacon strips in a large pot over medium heat.
- 2 Brown the bacon and aromatics for 4-5 minutes. Add hare pieces and season with salt, pepper, and spices. Brown the meat thoroughly.
- 3 Pour in white wine and add mushrooms (soak dried ones first). Add broth and tomato sauce to cover the meat.
- 4 Simmer until hare is tender, adding a knob of butter at the end if desired. Serve hot.
