Braised Fish With Red Wine Gravy And Croutons

Method
- 1 Place fish pieces in a pot with onion, parsley, thyme, mushrooms, spice, pepper, and salt.
- 2 Add red wine and enough water to create a gravy base. Bring to a boil over high heat.
- 3 Simmer until the liquid reduces by one-third.
- 4 Thicken the sauce by whisking in a mixture of butter and flour until smooth.
- 5 Fry bread bits in butter until golden. Place fish in a dish, top with fried bread, and pour the hot gravy over everything.
