Braised Endives With Lemon Butter Sauce

Ingredients

  • 12 endives
  • Salt
  • Pinch of sugar
  • Juice of ½ lemon
  • Less than 1 pint water
  • Butter for pan
  • Small piece of butter for sauce

Method

  1. 1 Trim endives, removing outer leaves and paring the bottom. Wash thoroughly.
  2. 2 Blanch endives in simmering water for 3 minutes, then drain.
  3. 3 Place endives in a buttered frying pan. Season with salt, a pinch of sugar, lemon juice, and less than 1 pint water.
  4. 4 Cook on stove for 2-3 minutes, then cover and transfer to a 350°F oven for 50 minutes.
  5. 5 Transfer endives to a serving dish. Reduce cooking liquid, stir in a small piece of butter, and pour over endives.
