Braised Endives With Lemon Butter Sauce
Ingredients
- 12 endives
- Salt
- Pinch of sugar
- Juice of ½ lemon
- Less than 1 pint water
- Butter for pan
- Small piece of butter for sauce
Method
- 1 Trim endives, removing outer leaves and paring the bottom. Wash thoroughly.
- 2 Blanch endives in simmering water for 3 minutes, then drain.
- 3 Place endives in a buttered frying pan. Season with salt, a pinch of sugar, lemon juice, and less than 1 pint water.
- 4 Cook on stove for 2-3 minutes, then cover and transfer to a 350°F oven for 50 minutes.
- 5 Transfer endives to a serving dish. Reduce cooking liquid, stir in a small piece of butter, and pour over endives.
