  • 1 fat stewing chicken
  • shortening
  • flour
  • 4 tablespoons flour
  • 3 cups chicken stock
  • ½ cup grated carrot
  • 2 green peppers, chopped fine
  • ½ cup finely minced onions
  • salt and pepper

Method

  1. 1 Singe, draw, wash, and wipe the chicken. Cook until tender in a fireless cooker or pot.
  2. 2 Rub the cooked chicken with shortening, dust with flour, and brown in hot fat in a deep saucepan, turning frequently.
  3. 3 Add 4 tablespoons flour, 3 cups chicken stock, ½ cup grated carrot, 2 chopped green peppers, and ½ cup minced onions.
