Braised Chicken With Carrots And Peppers
Ingredients
- 1 fat stewing chicken
- shortening
- flour
- 4 tablespoons flour
- 3 cups chicken stock
- ½ cup grated carrot
- 2 green peppers, chopped fine
- ½ cup finely minced onions
- salt and pepper
Method
- 1 Singe, draw, wash, and wipe the chicken. Cook until tender in a fireless cooker or pot.
- 2 Rub the cooked chicken with shortening, dust with flour, and brown in hot fat in a deep saucepan, turning frequently.
- 3 Add 4 tablespoons flour, 3 cups chicken stock, ½ cup grated carrot, 2 chopped green peppers, and ½ cup minced onions.
- 4 Simmer slowly for 30 minutes. Season with salt and pepper and serve.
