Braised Beef With Capers And Claret

Ingredients

  • 6 to 8 pound round of beef
  • Fat from the meat for greasing
  • Salt
  • Pepper
  • Pinch of cloves
  • 3 blades of mace
  • 1 cup capers or pickled nasturtium seeds
  • 1 bunch parsley
  • 3 sliced lemons
  • Claret (red wine) to cover meat

Method

  1. 1 Heat a large skillet very hot and grease with fat from the meat. Sear and brown the beef on all sides.
  2. 2 Cut gashes around the sides of the meat. Sprinkle salt, pepper, and a pinch of cloves into each gash.
  3. 3 Place beef in a deep baking dish with mace, capers, parsley, sliced lemons, and enough claret to almost cover the meat.
  4. 4 Cover closely and bake in a moderate oven (350°F) for 4 hours.
  5. 5 Serve hot or cold. If serving hot, slightly thicken the gravy and season to taste.
