Braised Beef With Capers And Claret
Ingredients
- 6 to 8 pound round of beef
- Fat from the meat for greasing
- Salt
- Pepper
- Pinch of cloves
- 3 blades of mace
- 1 cup capers or pickled nasturtium seeds
- 1 bunch parsley
- 3 sliced lemons
- Claret (red wine) to cover meat
Method
- 1 Heat a large skillet very hot and grease with fat from the meat. Sear and brown the beef on all sides.
- 2 Cut gashes around the sides of the meat. Sprinkle salt, pepper, and a pinch of cloves into each gash.
- 3 Place beef in a deep baking dish with mace, capers, parsley, sliced lemons, and enough claret to almost cover the meat.
- 4 Cover closely and bake in a moderate oven (350°F) for 4 hours.
- 5 Serve hot or cold. If serving hot, slightly thicken the gravy and season to taste.
