Braised Beef Shin With Onion And Carrot

Ingredients

  • 2.5 lbs shin of beef, thick cut
  • 2 tbsp drippings
  • Water to cover
  • 1 large onion
  • 4 whole cloves
  • 0.5 carrot, sliced

Method

  1. 1 Place the shin of beef in an iron pot with drippings and brown on all sides, turning as needed.
  2. 2 Transfer the browned meat to a stew-pan and add enough water to cover it completely.
  3. 3 Insert the cloves into the large onion and add it to the pan along with the sliced carrot.
  4. 4 Simmer gently for four hours until the meat is tender.
  5. 5 Remove the meat, onion, and carrot. Skim off excess fat if the liquor is too rich.
  6. 6 Thicken the cooking liquid and serve the meat in a dish with plenty of gravy.
