Braised Beef Shin With Onion And Carrot
Ingredients
- 2.5 lbs shin of beef, thick cut
- 2 tbsp drippings
- Water to cover
- 1 large onion
- 4 whole cloves
- 0.5 carrot, sliced
Method
- 1 Place the shin of beef in an iron pot with drippings and brown on all sides, turning as needed.
- 2 Transfer the browned meat to a stew-pan and add enough water to cover it completely.
- 3 Insert the cloves into the large onion and add it to the pan along with the sliced carrot.
- 4 Simmer gently for four hours until the meat is tender.
- 5 Remove the meat, onion, and carrot. Skim off excess fat if the liquor is too rich.
- 6 Thicken the cooking liquid and serve the meat in a dish with plenty of gravy.
