Braised Beef Roast With Bacon And Mushroom Sauce
Ingredients
- 1 rump of beef
- Salt pork, cut into strips for larding
- Pepper and salt
- Cloves, mace, and allspice
- Slices of bacon
- Whole black pepper
- Bay leaves
- 2 onions
- 1 clove of garlic
- A bunch of sweet herbs
- 2 quarts weak stock
- 1/2 pint white wine
- Flour and butter for thickening
- Green onions, cut small
- Pickled mushrooms
Method
- 1 Bone the rump of beef. Lard it thickly with salt pork seasoned with pepper, salt, cloves, mace, and allspice. Season the beef itself with pepper and salt.
- 2 Line the bottom of a heavy pot with bacon slices, whole black pepper, allspice, bay leaves, onions, garlic, and sweet herbs. Place the beef inside.
- 3 Top the beef with more bacon slices. Add the weak stock and white wine. Cover the pot closely.
- 4 Stew slowly for 6 to 7 hours until the beef is tender.
- 5 Remove the beef. Strain the cooking liquid, thicken with a flour and butter mixture, and stir in green onions and pickled mushrooms. Pour the sauce over the beef.
