Braised Beef Fillet With Mashed Potato Balls
Ingredients
- 1 whole beef fillet
- Good brown sauce
- 1 pint beef stock
- Carrots, neatly shaped
- Turnips, neatly shaped
- Potatoes, mashed and fried into balls
- Brussels sprouts
- Onions
- Cream or milk
- Salt and pepper
Method
- 1 Trim the beef fillet and place it in a braising pan with brown sauce and stock. Cook very slowly until tender.
- 2 Add shaped carrots and turnips to the pan during the last stage of cooking. Fry mashed potato balls separately until golden.
- 3 For the purees, cook Brussels sprouts and onions separately in water until soft. Chop fine, rub through a sieve, and mix with cream or milk, salt, and pepper. Keep warm.
- 4 Transfer the beef to a serving dish. Arrange carrots, turnips, and potato balls around it. Pour the remaining pan sauce over the meat.
- 5 Serve with heaps of the warm onion and Brussels sprout purees on the side.
