Braised Beef Fillet With Mashed Potato Balls

Ingredients

  • 1 whole beef fillet
  • Good brown sauce
  • 1 pint beef stock
  • Carrots, neatly shaped
  • Turnips, neatly shaped
  • Potatoes, mashed and fried into balls
  • Brussels sprouts
  • Onions
  • Cream or milk
  • Salt and pepper

Method

  1. 1 Trim the beef fillet and place it in a braising pan with brown sauce and stock. Cook very slowly until tender.
  2. 2 Add shaped carrots and turnips to the pan during the last stage of cooking. Fry mashed potato balls separately until golden.
  3. 3 For the purees, cook Brussels sprouts and onions separately in water until soft. Chop fine, rub through a sieve, and mix with cream or milk, salt, and pepper. Keep warm.
  4. 4 Transfer the beef to a serving dish. Arrange carrots, turnips, and potato balls around it. Pour the remaining pan sauce over the meat.
  5. 5 Serve with heaps of the warm onion and Brussels sprout purees on the side.
